The Recipe
Ready to get started? Here’s how you can make your own Karnıyarık at home:
Karnıyarık Recipe with Ottoman Seasoning
Ingredients:
4 medium aubergines
300g ground beef or lamb
1 onion, finely chopped
2 cloves garlic, minced
2 tomatoes, diced
2 green peppers, chopped
2 tablespoons olive oil
1 tablespoon tomato paste
1 tablespoon pepper paste
1 teaspoon Cinar's Ottoman Seasoning
Salt and pepper to taste
1/4 cup parsley, chopped (for garnish)
1/2 cup hot water
Instructions:
Prepare the Aubergines:
Preheat your oven to 200°C (390°F).
Peel the aubergines in a striped pattern, leaving some skin on for texture.
Make a deep slit lengthwise in each aubergine, being careful not to cut all the way through.
Heat 2 tablespoons of olive oil in a large pan over medium heat. Sear the aubergine on all sides until they are golden brown and slightly softened. Remove and place them in a baking dish.
Prepare the Filling:
In the same pan, add the chopped onion and minced garlic. Sauté until the onion is translucent.
Add the ground beef or lamb to the pan and cook until browned.
Stir in the chopped green peppers and cook for another 2 minutes.
Add the diced tomatoes, tomato and pepper paste, Cinars Ottoman Seasoning, salt, and pepper. Cook the mixture until the tomatoes have softened and the flavours are well combined, about 5-7 minutes.
Stuff the Aubergines:
Carefully open the slits in the aubergines and fill them with the meat mixture, pressing it in firmly.
Pour 1/2 cup of hot water into the baking dish around the aubergines.
Bake:
Cover the dish with aluminium foil and bake in the preheated oven for 25-30 minutes, until the aubergines are fully tender and the filling is well-cooked.
Garnish and Serve:
Remove from the oven and let cool slightly. Garnish with chopped parsley.
Serve the karnıyarık warm, with a side of rice or fresh bread.
