Ingredients:

  • 2 tablespoons olive oil

  • 1 large onion, finely chopped

  • 2 green bell peppers, chopped

  • 3 tomatoes, peeled and diced

  • 3 large eggs

  • 2 tablespoons Cinars Salad and Vegetable Seasoning

  • Salt and pepper to taste

  • Fresh parsley, chopped (for garnish)

  • Crusty bread (for serving)


Instructions:

  1. Heat the Olive Oil: In a large skillet, heat the olive oil over medium heat.

  2. Sauté Onions and Peppers: Add the chopped onion and bell peppers to the skillet. Sauté for about 5-7 minutes, until the vegetables are softened and the onions are translucent.

  3. Add Tomatoes: Stir in the diced tomatoes and cook for another 5-7 minutes, until the tomatoes have softened and released their juices.

  4. Season: Add 2 tablespoons of Cinar's Salad and Vegetable Seasoning. Stir well to combine. Taste and add salt and pepper as needed.

  5. Cook the Eggs: Make small wells in the vegetable mixture and crack the eggs into the wells. Cover the skillet and cook for about 5-7 minutes, or until the eggs are cooked to your desired level of doneness. For runny yolks, cook for a shorter time; for fully set yolks, cook a bit longer.
